Del Maguey is committed to utilizing and protecting the ancient production processes that have been passed down generationally for hundreds of years. These artisanal practices, combined with diverse micro-climates produce a Mezcal that is unique to each region and village it is made in.
The Village of Las Milpas is remote, nestled among cornfields and rolling pastures high above San Dionisio Ocotepec. The agave is roasted in an earthen horno carved out of the granite hillside, which is then milled by horse-drawn molino, fermented using only ambient yeasts in open-air wooden fermentation tanks, and finally distilled in small copper stills.
The final product offers a nose of slate and minerality balanced with tropical fruit and citrus. The experience is perfumed with rose petals, lavender, and tarragon.
