Mezcal de Pechuga is made when a finished mezcal is redistilled with local fruits, grains, nuts, and a raw chicken breast are suspended in the still, cooking in the emanating vapors, and adding its own character to the finished product. This Bozal Mezcal is made similarly, except using a leg of lamb, in a bed of wild strawberries, apples, pineapple, pecans, and ginger.
This is a limited release, artisanally handmade Mezcal. It is heavy and viscous, fruity, yet balanced with citrus and smoked lamb. Rich earth tones and savory smokiness mark the character of this spirit.
